Summer is approaching!! To all my seafood lovers out there let’s talk lobster! A delicious gourmet food item that can be made into so many delicious meals. I often find myself over complicating food, but this is a simple, summer fresh meal that will only take you 30 minutes leaving you feeling full and refreshed.

Cooking time – 30 minutes

Serves – 2 people (double recipe for more)

Ingredients

  1. 2 Lobster tails
  2. 2 brioche hot dog buns
  3. Garlic butter
  4. Old bay seasoning
  5. 1 Lemon
  6. Chive
  7. Dill
  8. 1/4 cup mayo
  9. 1 celery stalk
  10. Shallots
  11. Salt
  12. pepper

Seafood used to be my arch nemesis, to be frank I’m not its biggest fan, and I don’t like cooking it, but this way is so easy and so delicious it’s almost fool proof.

  1. Start heating a pot on the stove to a slow boil. Add 2 tbs old bay, a squeeze of lemon juice and lemon lest. Add 2 tbs salt and give it a good mix.
  2. Let’s get started with the lobster, in the meantime we are going to ensure our lobster is defrosted. Since we aren’t doing anything fancy with it, when the pot is heated, just plop those guys right in there.
  3. Depending on the size of your lobster tail, a safe way to cook it is 1 minute per ounce, it’ll ensure it’s cooked perfectly. typically for 5-6 ounce lobster tail I will cook it 5-7 minutes to be safe.
  4. Have a bowl of ice ready on the size to put your lobster in when done cooking, this will ensure you don’t overcook it and end up with rubbery lobster. Leave it in the ice water for 5 minutes.

Now the easy part, let’s set up our sauce vegetable mixture that your lobster will swim in!

  1. While the lobster is cooling mince 1/2 celery stick, 1 shallot, chive and dill and put it in a bowl.
  2. Add lemon zest and a small squeeze of lemon juice. and salt, pepper and a sprinkle of old bay.
  3. Give it a good mix and put it to the side along with having your choice of mayo ready to go. If you wanna get fancy, try using garlic mayo for a better taste.

Let’s finalize the last steps and assemble this project!

  1. Heat a pan to medium low and add 2 tbs of garlic butter, if you don’t have it just use normal butter and add garlic powder or fresh grated garlic.
  2. While that heats, remove lobster from tail, don’t worry about perfection as after you pull it out, you are going to chop in into bite sized pieces.
  3. After the butter is melted and just sizzling, add your chopped lobster and mix it with the lobster for 1-2 minutes just long enough to warm it up.
  4. Remove lobster and some butter and add to bowl with herbs/vegetable’s and combine.
  5. Once combined add 2 tbs of mayo and combine, add more for a runnier consistency if desired.
  6. Toast brioche buns in garlic butter remaining in pan.

Remove buns, add lobster mixture and enjoy your creation!

Tips and Tricks

  1. To elevate use garlic mayo or any flavoured mayo.
  2. Add truffle oil during toasting of lobster for a unique, umami taste.
  3. Add hot sauce for a nice zing!
