
Grilled cheeses are the heart of every home, a comfort food cherished by many. From a quick lunch break to an evening snack designed to fill your body and warm your soul, they do justice in so many ways. While they are simple to prepare, we can definitely elevate this classic dish to new heights, making it even more tasty and satisfying. So, let’s go over a recipe to make a delicious grilled cheese that combines the best ingredients and techniques to create a meal that not only delights the palate but also evokes nostalgia for those cozy kitchen moments.

Prep Work
There is 2 ways to do this so we are going to start from the point where you have an uncooked chicken breast and we have to work with that.
- Turn on oven to 425F.
- While preheating grab out chicken breast, pat dry and season simple with salt, pepper, paprika and cayenne if you want some heat.
- Place on pan and once heated, cook for 18-22 minutes or until it has reach an internal temp of 165F.
- While chicken is cooking, slice onions, place a thin layer (about 2tbs) of mayo on both sides (inside and outside) of each piece of bread. Place 2 pieces of cheese of choice on bottom piece of bread.
- Once chicken is done cooking, pull from oven and let rest 5 minutes.
Chicken
Now there is 2 ways to do this, the first will be with chicken cooked by you just now, the second will be with precooked chicken.
- Once chicken is rested, shred well, and while still warm, coat with around 2 tbsp of your BBQ sauce of choice.
Second way with precooked chicken.
- If have leftover chicken in your fridge, pull out and shred well. heat a pan to medium low and once heated add chicken, 1 tbsp of butter and 2 tbsp of BBQ sauce of choice.
- Warm chicken and sauce till fully incorporated/butter is melted.
Assembly

Now let’s put it all together!
- Get a pan on the stove, heat to medium and place 1 tbs of butter into the pan.
- While pan is heating, assemble your sandwich, you should have the cheese on the toast with the mayo already. layer bbq onto sandwich and place sliced onions on top to close the sandwich. Just to preface one more time, there should be a layer on mayo on both sides of the bread. This will help give it a crispy exterior.
- Once pan is hot lay grilled cheese onto pan. Cook for 6-8 minutes and flip halfway.
- Once done serve with ketchup or aioli and enjoy!
Tips and Tricks
- Serve with creamy coleslaw for a crunchy bite.
- Use hot sauce with bbq sauce for more heat.
- Try a different cheese such as spicy havarti for different flavours.
- Serve with light soup to dip it in.
