Ingredients

  1. 2 large baking potatoes
  2. 1/4 cup milk
  3. 2 tbs butter
  4. 3 tbs herb cream cheese
  5. 3 garlic cloves
  6. parsley
  7. salt
  8. pepper

Lets talk potatoes, now most of us have cooked them but some have not, so to those who haven’t your going to be amazed by the ease of it.

  1. Bring a pot of water to a boil, make it salty like the sea.
  2. While water is heating, wash and peel potatoes and cut into 2 inch cubes. This is just to ensure easy fast cooking of the potatoes.
  3. Once water is boiling, put potatoes in, stirring every few minutes to ensure it doesn’t boil over. Boil for 10 minutes, then test for fork tenderness.
  4. While water is boiling mince garlic and parsley.
  5. drain potatoes and keep in same pot returning to warm spot on stove with heat off.

Lets assemble!

  1. Add 2 tbs butter and 1/4 cup milk, I recommend using a manual masher to leave some chunkiness to give it a bite. Mash lightly till milk and butter are mostly incorporated.
  2. Add 3 tbs herb cream cheese and minced garlic.
  3. taste for salt, add more if needed and finish it off with butter.
  4. To plate, sprinkle parsley and add knob of butter to top for a melty buttery bite.

Tips and Tricks

  1. Add chive for a stronger garlic bite.
  2. Season water with spices for a stronger flavour.
  3. Add a finishing oil to the mash such as chive oil or dill oil for a nice bright dish.
