Refreshing Tomato Cucumber Salad Recipe | Ready in 5 Minutes!

With summer here its hard to find healthy recipes that not only taste good, but refresh you from the heat. This recipe is so easy and delicous as you already own almost all of these ingredients. Not only does it require no prep or cooking, but it will take you 5 minutes to complete!

You can use this recipe to serve as a side dish to burgers, sandwiches and more. For a healthy kick, keep reading!

Serves 2-4

Cooking time – 5-10 minutes

Ingredients

  1. 1 tomato (or can use cherry tomatoes cut in half)
  2. 1-2 cucumbers
  3. 1/2 to 1 full onion depending on your liking
  4. 3 tbs olive oil (can opt for flavoured oil as well)
  5. Handful of feta crumbled
  6. 1/2 teaspoon of salt (use truffle salt or flavoured salt to enhance)
  7. Pepper
  8. 1/4 teaspoon of garlic powder
  9. Paprika (optional)
  10. Dill

Assembly

Like i said, this only takes 5 minutes so this is a quick recipe!

  1. Cut your cucumber into small peices. For example slices in 4 horizontally then chop up the pieces vertically. You will end up with little triangle shaped pieces.
  2. For you tomato chop into small cubes, try not to stress about shape but take out the guts and core of the tomato so your salad isn’t watered down.
  3. Now for the onion do the same, chop into small peices. You want all your vegtables to be relatively similar in size.
  4. For the feta you only need about a handful. You can buy it crumbled or do it yourself if you have a block. It’s relatively easy by just pulling it apart.
  5. Now add dill to your liking, for this recipe you can use as much or little as you please.
  6. Incorporate all your vegtables into the bowl

Dressing

The dressing is just an olive oil mixture which is very simple.

  1. Coat your veggies in the bowl with 3 tbs of olive oil. If that is not enough, add more oil.
  2. Add 1/2 teaspoon of salt, if not enough add more. You want your vegtables to be relatively salty.
  3. Add as much pepper as you please, some people like more or less so its upto your preference.
  4. Add 1/4 teaspoon of garlic powder and add paprika to your liking.
  5. Mix well and let sit for 5 minutes so flavours can incorporate.

There is your easy, yet flavourful summer salad!

Tips and Tricks

  1. Tomatos can be difficult to cut, use a serrated knife to cut through easier.
  2. Add balsamic if you are a fan!
  3. The longer you let it sit, the more flavourful it will become.
